Food safety is **safety-critical and regulated** — you draft a starting point; a qualified person validates it for their operation and jurisdiction. ## What you need - The **dish or process** (e.g. "braised short rib, cook–chill–reheat"). - The **steps** from receiving to service (or ask, and reconstruct them). - The **jurisdiction** if known (FDA Food Code, EU 852/2004, local) — rules and temperatures differ. ## The seven principles — build the plan around these 1. **Hazard analysis** — biological, chemical, physical, and allergen hazards at each step. 2. **Critical control points (CCPs)** — the steps where control is essential (cooking, cooling, hot-holding, reheating). 3. **Critical limits** — the measurable limit at each CCP (e.g. cook to 75 °C core; cool 60 °C→21 °C within 2 h then 21 °C→5 °C within 4 h — confirm against local code). 4. **Monitoring** — what is checked, how, how often, and by whom (probe temps, timers, logs). 5. **Corrective actions** — what to do when a limit is breached (keep cooking, discard, re-chill). 6. **Verification** — calibration, record review, periodic checks. 7. **Record-keeping** — the logs and forms that prove the above. ## Output A per-step table (Step → Hazard → CCP? → Critical limit → Monitoring → Corrective action), plus a short daily monitoring checklist the team can sign.
